Pea & white bean soup

Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cups frozen peas
- 1 can (15 oz) cannellini beans, drained and rinsed
- 3 cups water
- 1 tbsp lemon juice
- ¼ tsp salt
Make it
- Soften onion in oil over medium heat for 7–9 minutes.
- Add peas, beans and water. Simmer for 10 minutes until peas are fully cooked.
- Remove from heat. Blend with an immersion blender; alternatively cool enough for your blender and follow its hot-liquid instructions.
- Return to gentle heat if needed, then stir in lemon juice and salt.
